It’s not really clear how anyone was talking about the Ukraine joining NATO while they are in the middle of a war, as that would effectively mean that NATO was declaring war on Russia.
There is a mutual defense pact that would be triggered as soon as the papers were signed.
NATO could of course send troops in regardless of whether or not Ukraine is a member.
Albania was never a member of NATO.
